Make it personal with a Key-Lime Cheese-cake bite

One of my favorite cooks to watch on television is The Pioneer Woman. She gives me so many ideas that I can run with and put my own twist too. I created this key-lime cheese cake bite with a few personal touches which included our gourmet mango rum preserves.

Serving 2 dozen key-lime cheese cake bites
Pulse a single pack of cinnamon graham crackers
Pulse 4 tbsp of melted butter to graham cracker crumbles
Use cupcake baking cups, scoop 2 tablespoon of crumbles into the cups and pack down with hands.
Begin mixing the soften cream cheese
Add 1 cup of sugar,
2 eggs
Add key-lime extract *optional ( add two drops of green food coloring)
Fill 3 table spoons at a time into the cups
Place in 350 degree oven for 15 minutes
Take them out and allow them to cool for 2 hours.
Don't be a plain Jane! - Drizzle some gourmet mango rum preserves over the plate, add your cheesecake bite, a scoop of vanilla ice cream, toasted coconut and a lime to wow your guest.
